Vegan Peanut Butter Cups

Chocolate is my all time favourite guilty pleasure so I adore this healthier alternative to the treat as i'm not left feeling guilty afterwards! These are super easy and quick to make and will satisfy any sugar cravings.

Recipe:
1/4 Cup Coconut Oil
2/3 Cup Cacao Powder
2-3 Tbsp Real Maple Syrup
100% Natural Peanut Butter (Check the ingredient list when buying your peanut butter as it should solely be made from peanuts, no vegetable oils or unnecessary added extras).


Place the coconut oil, cacao powder and maple syrup into a small pot over a medium heat and stir until the mixture is smooth and melted. If your measurements are off this can alter the texture, for example I added a bit too much cacao powder so I had to balance it out with some more coconut oil.


Once your mixture is melted and smooth, pour it into moulds, filling the moulds only half way. I purchased these moulds from Kmart but small patty pans also do the job! Once the mixture is in the moulds, place it into the fridge to set for about 10 minutes. Keep in mind that you need to leave just under half of the mixture in the pot to use later on.


I used the Sanitarium smooth peanut butter for these cups, however, I prefer the texture of the crunchy peanut butter so use whatever you like.


Once the chocolate has set in the freezer, take a teaspoon and smooth the peanut butter over the set chocolate. This can be quite messy as you can see but do your best to smooth it over.


Once you have smoothed the peanut butter over, take the remaining chocolate mixture and pour it over the top. The mixture may have thickened up whilst waiting for the chocolate to set, so just heat it up over a low heat and it will return to the smooth consistency. Put the moulds into the fridge to set for another 10 minutes and you're done!

       

After they have set, take them out of the moulds and keep them in your freezer. So tasty and easy to make! You could be creative with the chocolate and add coconut or use a different nut butter such as almond.
